In the Larian cuisine predominates the lake, but there are also the rustic flavors of the mountain and the delights of the hills. Mountain and hill are custodians of that poor and genuine tradition enclosed in the symbol of polenta. Among the lake fish dominates the carpione or themissoltino. The mountains, during the summer, are inhabited by shepherds who settle at high altitudes to graze their herds and flocks. In these areas are born masterpieces of the art of cheese making with different varieties of alpine cheeses.
