Our Agriturismo loves historical research into the roots of Ligurian and non-peasant, Roman gastronomy (given the origins of the cook), and also to explore new combinations, always using strictly local and seasonal products. Our meats, cured meats and cheeses come from farms in the surrounding valleys that work with organic and natural methods, respecting animals. We are profoundly against forms of intensive farming. At Castagneto we love kneading and we make the dough ourselves, in traditional and non-traditional shapes, starting from typical Ligurian recipes and ending with pastas from central Italy THE CELLAR We are deeply convinced that wine is a food and that as such, it must be "clean" like the fruit and vegetables we grow. We have chosen for you some "Natural" wines produced with passion respecting the land, without the use of chemicals in either the vineyard or the cellar. We have a nice list that includes bottles from small and valid producers from all over Italy, from Alto Adige to Sicily and also some labels from nearby France. The relationship that Castagneto has with wine goes beyond the normal pouring of a liquid. The wine list that we propose is consistent with the philosophy of our farm, based exclusively on simply natural wines, that is, without the use of synthetic chemistry in the vineyard and with fermentations that start spontaneously in the cellar with their own yeasts. The Sanpè: The vineyard next to the Castagneto was planted around the 1940s by our neighbor's grandfather, an ancient expression of this area which has always been suited to the production of Bianchetta, Vermentino, Colombana, Albarola and Malvasia which make up our Sanpè, a full-bodied, savory, mineral white wine with balanced acidity, a wine that truly reflects the oenological expression of this valley. We have not filtered or clarified, but waited patiently only with a long natural decanting to make it cleaner, it was evaluated by many sommeliers, one of the best whites in Liguria, unfortunately only produced with no more than around 300 bottles per year, a rarity and excellence that you can only drink here with us.
