In Caprarica di Lecce, in the hinterland of Lecce, where the plain follows the coast and is full of olive trees, engineer Leo Piccino and his wife Rita Esposito have created an interesting experience that combines agriculture, oil mill, catering and hospitality in an old farmhouse, completely renovated with passion and respect for rural architecture. The ingredients used are 0 km, organic and strictly seasonal, many of which are grown on the farm.
Pantaleo, an agricultural entrepreneur with a civil engineering degree, and his wife Rita, who has a degree in physical education, belong to a generation of professionals aware that merging tradition and technological innovation is the way forward for agriculture. Pantaleo and Rita in 2002 took the helm of Piccinno’s family business, levering their previous working experience and bringing their competencies, but a pinch of courage as well! Production and renovation matters, as well as the overall management, pertain to the engineer. The “creative” side instead belongs to Rita, e.g. the farm restaurant, lectures, shop and public relations. The farm is located in the province of Lecce and is made up of about 270 hectares. Cultivation revolves primarily around olives with 30,000 trees, but crops and vegetables are farmed as well. Farming has been following organic standards since 1996. In recent years there has been an effort to shorten the supply chain and develop all related activities. As a result, a new business centre has been built in Caprarica di Lecce, renovating an old masseria and adding to the offer a restaurant and overnight stays – 100 covers and 20 rooms. A new olive oil mill, equipped with areas for educational activities, has been installed, achieving the highest standards of hygiene and quality. A small mill devoted to crops (e.g. durum wheat and spelt) has been added as well. Moreover, near Campi Salentina, a Negramaro vineyard has been purchased, and its excellent wine is available in both the restaurant and the shop. In 2010 agritourism activities were launched, counting on 100 farm restaurant indoor covers and wide green open spaces. In rooms with 40 beds have been added. The old Masseria in Caprarica di Lecce is thus reborn, renovated with passion and respect for the ancient rural architecture. It represents a valid example of well-rounded agricultural holding in the area. Surrounded by farmland, the Masseria is the ideal place to host parties and receptions of all kinds. On arrival one is greeted by the flavours of wood-oven pizzas and durum wheat or spelt bread, combined with characteristic starters, primarily based on vegetables. Tasty recipes mixing farm produce with seafood aren’t lacking either. Only local seasonal ingredients are used, for the most part cultivated in the farm itself (and available in the farm shop). Using exclusively own or local produce guarantees healthy and natural food, respectful of traditional flavours from Salento. Conceived in its appearance and substance with the objective of full transparency, it is the natural place for education and training. Production and processing sites are fully usable and accessible. One can review “from olives to oil” and “from wheat to bread” supply chains and enjoy a classroom with qualified teachers and audiovisual materials. It represents a unique experience to taste and have first-hand experience of rural life, going home with some olive oil supply as well. Furthermore, the Masseria with all its spaces and equipment hosts cooking classes. Finally, in the Masseria numerous cultural or recreational events are held, such as “Meeting the author, food for the mind”, a review of local writers, “Jazz in Caprarica”, a music festival featuring international artists, or “City Camp”, a playful summer camp dedicated to teaching English. In the farm, as a perfect end to the supply chain, there is a shop for the exhibition and sale of all products. It is as well possible to order Christmas hampers, customised gift boxes, etc. Deliveries within Italy or abroad are available.
Masseria Stali also hosts cooking classes for professionals or enthusiasts of the sector having appropriate spaces and equipment.
