Among the green hills of Maremma, in the heart of the Sorano area and a stone's throw from Sovana and Pitigliano, the organic farmhouse Aia del Tufo provides an ideal setting to fully enjoy nature and genuine cuisine.
Traditional dishes and products are the result of strict organic farming, which includes medicinal plants. Wheat and spelt flours produced by the small mill's stone mills make the pasta and desserts truly special, with an eye toward vegans and celiacs. Seasonal fruits are processed into jams, pickles and mustards.
The Aia del Tufo farmhouse has five warm and welcoming rooms. The brightly colored stucco work is reminiscent of the four seasons, and each room is crowned by splendid reproductions of important Etruscan frescoes created by local painter Alessandra Letteri. From the windows of the rooms, located on the second floor of the farmhouse, you can enjoy enchanting views of the gardens and fields surrounding the farm, and with a bit of luck you may catch a glimpse of wild animals such as deer or wild boar, which populate the area.
Staying overnight in the farm's rooms, guests can wake up to the crowing of the rooster and watch the production of homemade bread, participate in the feeding of geese, goats and donkeys, and walk among fields of pumpkins and paths leading to Etruscan hollow ways.
The kitchen offers unique dishes of high quality, purely homemade and based on typical local products many of which are grown and harvested on the grounds of the property. All dishes are prepared following traditional methods and recipes, have the flavor of good things homemade and are appreciated by those seeking a healthy and genuine diet. In the appetizers you can find the lost flavors of homemade cured meats , prosciutto, capocollo, sopressata, salamino, salciccia both pink pork and for the more experienced "cinta senese" and wild boar, but also vegetables in oil and excellent pecorino cheese from artisanal dairies accompanied with chestnut honey and homemade mustards .The pasta is all handmade with flours from ancient grains, tagliatelle, pappardelle, pici, tortelli ricotta and spinach, lasagna, and potato gnocchi served with traditional wild boar, aglione, porcini mushroom and meat sauces.You can also enjoy typical soups such as "acquacotta" excellent in summer with garden vegetables, ricotta and old-fashioned soup, and potato velouté with truffles. For the second course, all the meats cooked come from the farms or purchased outside from small farms connoted by the Agriqualità label. You can choose from wild boar in bianco with black olives, lamb in buglione, pork tenderloin with porcini mushrooms, rabbit alla cacciatora or mixed grills.The naturally leavened bread is handmade and baked in a wood-fired oven, unmistakable to every palate, the oliveoil is home-produced of excellent quality, and the white and red wine is produced by local organic farms. To finish unfailingly delicious desserts, passionately prepared by Alessia, tozzeti with vin santo, ricotta mousse with cooked grape must or chestnuts, chocolate and cinnamon cupcake, tart with lemon cream, fruit millefeuille.
The educational farm on the farm is available to young and old alike: workshops "from wheat to bread," "educational vegetable garden" and cooking classes are offered here. There is also a country zoo.
