A historic farm at the heart of the Pollino massif, in the commune of Chiaromonte, at 750 metres altitude. The farm mainly produces cheese, ripened in two stunning natural caves, hand-excavated just after the second world war: the caves maintain a temperature of 18 degrees all year round, making them the perfect location for the maturing process.
Since the 1990s, the farm has also reared livestock to produce the zero mile ingredients for the cheese.
The owner and dairywoman is Maria Stellato. With her baskets made of reeds collected on the banks of the nearby rivers, Maria is happy to show guests how the farm produce is born.
Guest accommodation is available in single, twin and triple rooms, and you can choose from bed & breakfast, half board or full board. The rooms are all traditionally furnished, with their own private bathrooms.
The agriturismo is surrounded by spectacular scenery, unspoilt nature and total peace and quiet, perfect for a relaxing break.
The agriturismo is located in Chiaromonte, in some of Italy's most beautiful landscape, in the green heart of the Pollino National Park, the country's largest protected area, where you can enjoy wonderful excursions through breath-taking scenery.
The sea is around an hour's drive away, and 1.5 hours takes you to Matera.
The educational farm welcomes school groups and guests looking to discover how a real farm works, from caring for the animals to the milking and of course the cheese production, with guided tours of one of the two ripening caves.
The farm has been active since 1995, and the owner, Maria, has plenty of stories to tell.
With around 600 sheep and goats, in order to obtain the right milk and ensure the highest quality produce (the farm's guiding principle), two breeds were selected: the Saanen goat - the largest existing dairy breed, and the Sarda sheep, one of the oldest sheep breeds in Europe. The milk is processed raw (unpasteurised), to preserve all of its organoleptic properties. The cheese is dry-salted, and constantly monitored as it ripens in the caves.
This is also a closed chain: the pastures at over 750 metres above sea level, the animals and their folds are all owned by the farm!
